What is it? Okay picture this (and try not to get hungry!)
Roasted pork cook to perfection (but still juicy) with streaming hot Mote (a type of white corn) and homemade hot sauce! You can have this with 100% natural juice or soda or beer. This dish is the #1 favorite of the people of Riobamba.
A whole section in Mercado La Merced is dedicated to selling just roasted pork!
